Mini Fritatas

Klits 7 eiers en 2 teelepels melk met 'n bietjie sout en peper. Smeer 'n muffin pannetjie vir 12 porsies (of gebruik 'n silikon muffin pannetjie wat jy nie hoef te smeer nie).
Voeg jou gunsteling vulsel by, bv. ertjies met vars kruisement, bokkaas, sampioene, spek, gerasperde kaas, kersie-tamaties of 'green pepper'. Deel dan die eiermengsel gelykop oor die muffin pannetjie holtes.
Bak vir 15-20 minute in die oond teen 180 °C tot dit 'n goue kleur het en "crisp" is. Laat dit dan effens afkoel voordat jy dit uit die muffin pannetjie haal.

Savoury cob bread

SAVOURY COB FILLED LOAF
1 round bread loaf
1 x 250 g packet cream cheese
300 ml light cream
3 rashers bacon, cooked & chopped
chopped spring onions, to taste
2 cups grated cheese
Preheat the oven to 180 degrees c
Neatly cut off the top of the loaf & set aside.
Pull out the soft bread inside the loaf, breaking into pieces.
Either leave the bread pieces fresh or bake them in the oven until golden brown.
To make dip, mix the cream cheese with the light cream until smooth.
Mix in bacon, spring onions & grated cheese.
Spoon mixture into the hollow loaf & place the top back on.
Wrap the loaf in aluminium foil & bake for 1-1.5 hours.
Serve with the pieces of bread on the side for dipping.

Quick Nachos

Ingredients

Are you making this?  
1/2 bag favorite tortilla chips
1 1/2 cups cheddar cheesesliced
1 15 oz can black beansdrained and rinsed
1 medium ripe avocadocut into cubes
1/2 cup favorite pico de galloexcess liquid drained off
2 tablespoons jalapeno peppers (optional)sliced
Original recipe makes 2 Servings

Preparation

1. Heat oven to 425 degrees.
2. Cover rimmed, metal baking sheet with chips then top chips evenly with cheese.
3. Place nachos in oven and bake until the cheese is almost melted. Top nachos with black beans and then continue to bake until cheese is completely melted.
4. Remove nachos from oven and top with avocado, pico de gallo, and jalapeno slices (if choose).

Bacon & Egg Puffs

Serves 4
Cheese, bacon, egg, bread - all in one delicious little treat. Excellent for brunch or a family supper.

TOOLS
1 large measuring jug or mixing bowl
1 balloon whisk or fork
Muffing pan
Pastry brush
1 pair of scissors
2 large spoons
Oven gloves

INGREDIENTS
2 cups of cubed 1cm x 1cm, white or wholewheat bread (crusts included)
2 cups (500 ml) milk
4 eggs
1 t (5 ml) Ina Paarman's Seasoned Sea Salt
250 g rindless streaky bacon
½ cup (125 ml) Gouda or Cheddar cheese, grated
6 cherry tomatoes, cut in half
Ina Paarman's Cajun Spice

METHOD
Beat the milk, eggs and Seasoned Sea Salt together. Add the blocks of bread and leave to stand for at least 15 minutes so the bread can soak up the liquid (can be done the night before). Preheat the oven to 180°C. Butter the hollows of a muffin pan. Line the sides of the muffin hollows with strips of bacon. Cut remaining rashers up and use these pieces to line the bases of the muffin pan.

Divide the egg and bread mixture between the muffin hollows. Sprinkle with cheese. Top each one with a cherry tomato half and sprinkle with Cajun Spice for colour and flavour. Bake for 25-30 minutes until firm, puffy and golden brown.

Serve while still hot. Lovely with sautéd mushrooms and grilled sausages for a memorable Brunch! For supper serve with bread and a salad.

Fresh tomato salsa

Ingredients

3 tomatoes, chopped
1/2 cup finely diced onion
5 serrano chiles, finely chopped
1/2 cup chopped fresh cilantro
1 teaspoon salt
2 teaspoons lime juice

In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice. Chill for one hour in the refrigerator before serving.

Sausage roll with pastry


SHORT CRUST PASTRY INGREDIENTS
The basic ingredients for the Shortcrust pastry are twice the amount of flour to fat. The recipe below will be enough to make 12 mince pies with a bit left over for error.

Metric
55g Cooking margarine (e.g. Stork)
55g refined cooking fat / lard (e.g. Cookeen)
220g Plain flour
NOTES
In our recipe we have used Cooking margarine and cooking fat / lard. It is quite possible to simply use Cooking margarine or a mix of butter and fat / lard. We have found our mixture produces the best shortcrust pastry. Whatever is used the proportions of fat to flour should be maintained - twice the weight of flour to that of the fat.

WHAT SPECIAL KITCHEN EQUIPMENT
A baking tin for 12 pies
A rolling pin.
A brush to coat the pastry edges with milk - not absolutely necessary.

Add the margarine and cooking fat to a large bowl (cut into lumps) and sieve in the flour. Do this from as high as possible to incorporate air into the flour as it falls.
Incorporating air into the mixture will give you a lighter and better shortcrust pastry.

Gently rub the flour, and margarine / lard together with your hands lifting them and letting the mix drop back into the bowl. This will help more air into the mixture.
The mixture should end up as small crumbs although some larger bits may be present. Don't overdo this stage, it should only take two or three minutes.

Add 3 tablespoons of water to the mix and 'cut' the mixture together for a minute or so. Then use your hands to gently blend the mix together even further. If it won't hold together add another half tablespoon of water.
The mix is of the correct consistency when it is in a ball and can collect all the odd bits around the bowl into one single ball.

Wrap the mix in cling film and place it in the fridge for 30 minutes to 'rest'. After it has rested for 30 minutes it is ready to be rolled out.

Turn the oven on, setting it to 200°C / 400°F / Gas 6.

Divide the pastry mix into three roughly equal parts. Dust the work surface liberally with flour to prevent the pastry sticking to the surface.

With your hands, roll one portion of the pastry into a tube shape about 30cm (just over one foot long). Do the same with the other two portions.

Recipe for beef:
300g beef mince
1 small brown onion, finely chopped
1 carrot, peeled, grated
1 egg, lightly beaten
1 tablespoon flat-leaf parsley leaves, chopped
1/2 teaspoon dried mixed herbs
1/2 teaspoon ground black pepper

Combine mince, onion, carrot, egg, parsley, dried herbs and pepper in a large bowl. Mix until well combined. Cut pastry sheets in half. Divide the beef into three roughly equal portions.

With your hands, roll one portion of the sausage meat into a tube shape about 25cm (one foot long). Do the same with the other two portions.

Place each strip of sausage roll on a strip of pastry. The pastry should be just a bit longer than the sausage meat. Brush some milk along the edges of the pastry
If you don't have a brush just dip your fingers in the milk and run them round the edges. The purpose of this is to help the edges and ends stick together.


Roll the pastry round the sausage once. Trim the pastry as shown in the picture. Note that we have left a flat bit of pastry attached. Now roll the rube onto the flat bit so that no seam is visible from the top.
This will also stop the meat oozing out from the pastry.

Use a knife to cut each of the strips of sausage roll into the length you prefer. We cut each of ours into three.
Use a knife to cut a few small ridges in the top of each sausage roll, this makes them look more attractive when cooked. Brush the top of the sausage rolls with a little milk to give the a golden brown colour when cooked.


Lightly grease the baking tray, place the sausage rolls on it and put it in the middle of a pre-heated oven (200°C / 400°F / Gas 6) for 25 minutes or until the pastry is light golden brown.
Do not open the door until at least 20 minutes has passed.

Pretzels


Ingredients
4 teaspoons active dry yeast
1 teaspoon white sugar
1 1/4 cups warm water (110 degrees F/45 degrees C)
5 cups all-purpose flour
1/2 cup white sugar
1 1/2 teaspoons salt
1 tablespoon vegetable oil
1/2 cup baking soda
4 cups hot water
1/4 cup kosher salt, for topping

Directions
In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.
In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.
Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water.
When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is all shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with kosher salt.
Bake in preheated oven for 8 minutes, until browned.

Crunchies Hullets


Ingredients

310ml (1¼ cups) flour
310ml (1¼ cups) breakfast oats
310ml (1¼ cups) coconut
185ml (¾ cups) Huletts White Sugar
20ml (4 teaspoons) Huletts Golden Syrup
125ml (½ cup) butter or brick margarine
5ml (1 teaspoon) bicarbonate of soda
45 - 60ml boiling water

Method


Combine dry ingredients.
Melt the Huletts Golden Syrup and butter together. Combine the bicarbonate of soda with the water and add to the butter mixture.
Mix together with the dry ingredients.
Press the mixture into a Swiss roll tin (or for a thicker crunchie, bake in a square 20cm x 20cm tin) and bake for 20 minutes at 150ºC. Gently press down the sides if they seem to rise too much.
When light brown, remove from the oven and cut into squares. Switch off the oven. Return crunchies to the oven, for about 10 minutes to dry out.
Allow to cool before removing from tin.

Samoosas

Dough:
1 1/2 cups of all purpose flour
1 1/2 cups of wheat
1 1/2 Tabelspoons olive oil
1 1/3 - 1 1/2 cup frat free milk or water
1 teaspoon sugar
1/2 teaspoon baking powder
1/4 teaspoon salt

Filling:
250 g minced meat & spices for filling or
500g low fat feta
1/2 cup shredded cheddar
1/2 tsp mint
dash of blak pepper

Sealing dough:
1/4 cup flour
1/4 - 1/3 cup water

Mix all dough ingredients and knead for 2-5 minutes, cover with plastic wrap, let stand at room temeprature for 15 minutes. Divide into 5 equal pieces on a floured surface in and roll into 10 cm rounds. Place 2 teaspoon of filling in the centre of the dough. Brush edges with the sealing dough, fold into cone shape, press edges together and seal. Repeat.

Deep-fry samoosa in hot oil in batches until browned; drain on absorbent paper.

Raisin date granolas

Prep Time: 30 minutes
Cook Time: 35 minutes
Ingredients:

* 2 cups regular rolled oats
* 1/2 cup coconut
* 1/2 cup coarsely chopped slivered or slice almonds, or chopped peanuts
* 1/2 cup sunflower seeds
* 1/4 cup sesame seeds
* 1/2 cup honey or maple-flavored syrup
* 1/3 cup vegetable oil
* 1/2 cup raisins or dried cranberries
* 1/2 cup snipped pitted whole dates

Preparation:
Preheat oven to 300 degrees F. Grease jellyroll (15 x 10 x 1) pan. Stir together rolled oats, coconut, nuts and seeds. In separate bowl, combine honey or syrup, oil and cinnamon; stir into oat mixture. Spread mixture evenly into prepared pan. Bake for 20 minutes then stir. Bake for another 10 to 15 minutes or until lightly browned.

After baking immediately turn mixture out onto a large piece of foil. Stir in raisins and dates. Allow to cool and then break into chunks. May be stored at room temperature in tightly sealed containers or bags for up to 2 weeks. May also be stored longer in the freezer.

Makes about 8 cups.

*Don't substitute low sugar or light syrup in this healthy recipe. The natural sugar in syrup and honey acts as a much needed preservative.
