Cupcake icing recipes

Buttercream Icing

Ingredients
Margarine 500g
Butter 500g
Sugar Syrups (cold) 500g

Ingredients For Sugar Syrup
Sugar 450g
Water 180g
Lime 1 piece

Boil all sugar, water and lime on medium heat for about 20-30mins.

How To Make
1. Cream butter and margarine until light and fluffy.
2. Add cold sugar syrup, little by little for 1 min.
3. Continue mixing for another 2-3 mins.



Royal Icing

Ingredients
Icing sugar 1580g
Egg whites 245g
lime or vinegar 7g
Blue coloring 1/2 drop

How To Make
1. Beat egg whites for 2-3 mins on high speed.
2. Replace whisk with beater and add icing sugar gradually.
3. Add lime or vinegar and lastly add the blue coloring.



Marzipan

Ingredients
Granulated sugar 195g
glucose syrup 30g
water 60g
egg whites 20g
ground almond 200g
icing sugar 130g

How To Make
1. Boil sugar, glucose and water to 118 degrees C.
2. Stir in the ground almonds
3. Stir in the egg whites
4. Pour out onto a flat surface and work into pliable paste.
5. Add icing sugar.
6. Keep paste in an air-tight container or plactic bag to prevent skinning.



Sugar Paste

Ingredients
Gelatin powder 15g
water 100g
glucose syrup 125g
glycerine / sorbitol 25g
Icing sugar 1500g

How To Make
1. Sprinkle gelatin over water and double boil.
2. Add warm glucose syrup followed by sorbitol.
3. Pour solution into a mixer and mix with a paddle.
4. Add icing sugar gradually and mix on slow speed.
5. Remove sugar paste and knead in icing sugar if necessary.
